Chicken tagine with vegetables is a hearty and flavorful Moroccan dish that combines tender chicken with a variety of vegetables, cooked in a fragrant, spiced sauce. This dish is versatile and can be adapted based on the vegetables you have on hand.

Required Ingredients

  • 2 pieces of chicken (any part)
  • 1 onion (obligatory)
  • 1 tomato
  • 2 carrots
  • 2 Zucchini
  • peas
  • Salt and pepper
  • Chopped parsley and cilantro
  • Chopped garlic
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of ginger (powder)2 table spoons of oil (sunflower)

  • Ras El Hanoute (the mix spice)
  • 2 table spoons of olive oil
  • turnip

  • potatoes
  • tomatoes

Making chicken marinade
  • Place the chicken pieces in a big bowl and add a half teaspoon of each of the above spices to marinate them along with the chopped garlic and parsley.
  • Add some sunflower oil and mix everything (or both oils).
Start making the tagine
  • Start by layering sliced onions or tomatoes (or both) at the base of the tagine.
  • Place the marinated chicken in the center of the tagine.
  • Arrange the vegetables so they cover the chicken.
  • Season the vegetables with a small pinch of salt and pepper.
  • Add two to three table spoons of each oil (extra olive oil is optional).
  • Cook for at least 45 minutes on low heat.
  • Continue to keep an eye on your tagine, and occasionally add water (only when it gets dry).
Notes
  1. When adding veggies to marinated chicken, always start with those that require more time to cook, like carrots, and, if you have any, add the peas on top.
  2. The number of spoons you used to marinate the chicken at the beginning determines how much oil you should add to your tagine.
  3. Keep your tagine on low heat at all times to avoid drying it out and the need to add water; if there is extra sauce at the end, turn the heat up for a few minutes to reduce it.
