Required Ingredients

- Ginger powder
- Sunflower oil and olive oil

Making tomato sauce
- To make tomato sauce, grate the tomatoes in a frying pan or saucpan, or use any canned tomato sauce.
- Add half a teaspoon of cumin, ginger, turmeric, pepper, salt, and a generous spoonful of chopped garlic, along with paprika, parsley, and coriander.
- On low heat, cook the tomato sauce.
- Let us now make the meatballs by adding a generous amount of coriander and parsley.
- Add half a teaspoon each of ginger, salt, pepper, paprika, cumin, and optional Ras El Hanoute to the mixture.
- Combine everything and begin preparing Kefta meatballs.
- As soon as the sauce is reduced, pour the sauce into a tagine, add the Kefta meatballs to the tomato sauce, and put the tagine over low heat.
- On the tagine, crack three eggs and garnish with parsley, coriander, or both.
Notes
- To prepare this dish, you can use any pan instead of a tagine.
- The aubergine salad can be made with the same sauce, omitting the meatballs.
